Morning Fuel! My Favorite Omelet Recipe

I know, I know, you are told over and over to be sure to make time for the "most important meal of the day" and here I go again repeating this age-old adage all up in your face, so I will stop right here and just get on with the recipe...after I speak my piece anyway... ;)

Breakfast is important to me.  I try to get in a protein, dairy, complex carbohydrate (for fuel!) and veggies or fruits and then I'm satisfied until my mid-morning light snack (if I've worked out that morning & need extra fuel) or until lunchtime if I have not worked out that morning.  So here is one of my favorite flavorful breakfasts that is quick, nutritional and filling!


Ingredients:
1.  Egg Whites
2.  Sauteed Pepper & Onion Blend (I like to use frozen fajita veggies)
3.  Healthier Lunch Meat, sliced and sauteed with veggies
4.  Fresh Spinach leaves
5.  Feta Cheese Crumbles
Optional: Cracked Pepper, Sea Salt (and I love to add jalapenos too!)
Directions (In Photos)

#1 Chop up lunchmeat (or you can use turkey bacon) and saute in pan sprayed with non-stick cooking spray or olive oil.  
#2 Add frozen veggies (or fresh if you prefer).
Set aside on plate (as pictured above)
#3 Using same skillet, spray pan with non stick spray and pour egg whites (or crack egg whites into bowl & mix) to cover bottom of pan. I don't usually have a specific amount, I just like to coat the bottom of the pan for sure, and then add a little bit more so omelet is not paper-thin (and therefore hard to flip!)
#4 Next add the fresh spinach leaves down the middle.
#5 Add fresh cracked pepper & sea salt at this time (if you like)

#6 Sprinkle meat/veggie mixture on top of spinach & add a small amount of Feta cheese
#7  I like to sprinkle a small amount of water around the edges of the omelet and then put the lid on the pan for a couple minutes until the egg looks like it is settling up (this helps greatly with the next step!)

#8 Now of course the tricky part I couldn't get as I took photos, but if you followed my previous tip in #7 by sprinkling water around the edges & putting on the lid for a few minutes, then the condensation will help the edges of the omelet loosen!  This, combined with my next tip of using 2 spatulas: use one to hold the "insides" of the omelet so it does not shift, and the other to flip the edge inward, you will be a professional omelet turner in no time!
And there you have it!

My hubby and I usually split this omelet, and add a complex carb (like whole what toast or oatmeal with flax seed) along with our morning homemade double-tall skinny vanilla lattes (double shot of espresso,  splash of skim milk & sugar free vanilla syrup).  
 Of course you can modify this to meet your dietary needs.  It is equally delicious with no meat, and sometimes I add jalapenos or cayenne pepper for a little punch,  and you could even add some salsa on the inside (or outside) for extra flavor!  I am so addicted to adding the feta cheese because it is such a strong cheese, you do not need much at all to add immense flavor, but you could experiment with adding 2% shredded cheese as well if you aren't a fan of feta.

  1. That looks so yummy! :) I love omelets! Here at my campus, the dinning hall has a station for omelets and they make it with whatever you want from their options. I know this is bad, but I usually get it with just cheese every once in a while. :X

    However, aside from the Turkey(not a fan, or of ham! lol) this recipe looks delicious :)

    1. So happy you like omelets too! Yummy protein filled breakfast! That is fine to get it with just cheese as a treat :D You could totally do this without the meat for sure! I've always wanted to try it with broccoli as well. I'm not sure if it would be good or not though! :)

  2. I am totally going to make that omelet! It looks so good. I always forget to put spinach in my omelets. I love these kind of meal ideas. Have you done a fitness update lately? Are you still running?

  3. Ok, that omelet looks super delicious! I really need to eat much, MUCH healthier and get back on the exercise train. I literally gave up on exercising about 4 weeks ago. After 8 months I got very discouraged from not seeing results. Obviously, I wasn't doing it right!! Ugh.
